1/4 medium white onion
1 jalapeño pepper
1 clove of garlic
1/4+ c water
2+ T olive oil
1 t salt
1/4 c cilantro, plus more to garnish
1/2 of a lime, squeezed for juice
Put all of the ingredients into a blender and pulse until smooth. If needed, add more water—a little at a time—to get a good, fluffy consistency. Add more olive oil to make it more creamy if desired. But not too much, or it will taste like olive oil. And who wants that? “Not me,” said the avocado!
