Batter
- 1/4 cup chickpea flour
- 1 tbsp flax meal
- 1/2 c soy milk
- Salt & pepper
Breading
- 1 bag Cheese-Less Thins (1 cup crushed)
- 2 tbsp nutritional yeast
- 1/4 tsp garlic powder
- Salt & pepper
Tofu
- 1 package extra firm tofu
Easy Vegan Ranch
- 3/4 c vegan mayo
- 2 tbsp lemon juice
- 1/2 tbsp fresh chopped dill (or 1/2 tsp dried dill or parsley)
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Method:
- Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
- Press the tofu by wrapping it in paper towels or a clean dish towel and placing it under a heavy object for 15-30 mins while you prep.
- Make the batter by whisking together chickpea flour, flax seed meal, soy milk, salt and pepper in a bowl. Let it sit for 5-10 minutes while you make the breading.
- Using a kitchen mallet or the back of a wooden spoon, crush the cheese-less snack thins until they resemble a breadcrumb-like texture. You can keep them in the bag while you do so.
- In another bowl, add the crushed cheese-less snack thins, nutritional yeast, garlic powder, salt & pepper, and mix to combine.
- Once the tofu is finished pressing, use your hands to tear it into chunks. About 12 pieces.
- Dip each piece first in the batter, shaking off the excess, before placing it into the breading and coating all sides. Use one hand for the wet and one hand for the dry to prevent sticking!
- Place the tofu on the parchment lined baking sheet.
- Lightly mist with olive oil before baking for 22 mins, flipping and misting with more olive oil halfway through.
- Make the easy vegan ranch by combining everything in a bowl and whisking to combine.
